Sweet and Sour

Today was the Monday songs have been written about.
And it got more Monday as the day wore on.
Monday most definitely bites!


My day was mostly sour, but I hope that yours was mostly sweet!
So I thought I'd share my mom's Sweet and Sour recipe with you.
She got the recipe from a friend who got it from the Little China district in Vancouver.
An international recipe!

Sweet and Sour
sauce:
     4 tablespoons cornstarch
     1/2 cup sugar
     1/2 cup vinegar
     6 tablespoons soy sauce
     1 tsp. salt
     2 cup water
     1 cup pineapple juice (use the juice from the can of chunks, just add water to make up 1 cup.)
     1 16 oz can pineapple chunks

cooked boston butt cut into chunks -- I put it in the crock pot on high all day so it's more shreds than chunks

In saucepan mix cornstarch and sugar; add vinegar and mix well. Add soy sauce, salt, water, pineapple juice and pineapple chunks; place on medium-high heat and stir constantly. Cook until thick and clear.
Add cooked pork.

Can be made up to one day ahead and refrigerated. It freezes well, too!

I always serve mine on rice.
We LOVE it.
 We almost lick the plate clean.....

Sounds wonderful, Amy... I love cooking roast beef in the crockpot... It's so good when it just falls apart... YUM...
