
I have wanted to try smitten kitchen's Gramercy Tavern's Gingerbread.
I don't know why.
I wasn't sure I liked gingerbread.
Perhaps it was a "Try it and you'll like it," type thing.
Maybe.
I tried it.
It was good!
I had about half of the cake left.
Freeze it?
Then I saw it in Family Circle Magazine--a recipe for Gingerbread Trifle.
Yes!
Okay, so I didn't follow the recipe, exactly.
Here's what I did....
1 box instant vanilla pudding (small box)
2 cups milk
4 oz whipped topping
2 cups whipping cream
2 tablespoons confectioners sugar
1/2 tsp vanilla
1/2 Gramercy Tavern Gingerbread cake
gingersnaps, crumbled (they were handy, but next time I'd probably use molasses crisps)
Make pudding according to package directions.
Set aside.
Whip the whipping cream, confectioner's sugar, and vanilla until soft peaks form.
Fold the whipping cream into the prepared pudding.
Cut the gingerbread cake into bite size pieces.
Layer the trifle:
1/3 cake
1/3 pudding mixture
1/3 whipped topping
1/3 crumbled cookie mixture
Continue until everything is in the trifle dish.
Enjoy!
The kids liked it the gingerbread much better this way instead of plain.


Off to find where that dancing Amy video is hiding.
It may come to a tragic end......
