Fast Fixin'



Sometimes I just don't feel like cooking.
I'm tired.
The kids are nuts.
It's late.
I try to keep something on hand that I can just throw together.
Easy things.

One of those easy throw together recipes comes from my great-grandmother.
And it has a story to go with it.
Of course.
My great grandparents were traveling to Texas from Atlanta to visit my mom and her family (mom was a little girl). They stopped just inside Texas at a little restaurant. My Granny came away with this recipe.  We've been eating ever since.

Tamale Casserole


2 can tamales
2 can chili with beans
4-6 eggs, scrambled with milk
12-16 oz cheese, grated
1 small onion, chopped

Heat oven to 350℉. Remove the tamales from the paper. Put them in the bottom of a greased 2 quart dish. Pour the chili on top. Top with scrambled eggs. cheese, and then onion. Cook in oven for 30 minutes or until hot and bubbly.
Serve with salad and cornbread.

Easy Peasy!

You had me at 12-16 oz. of cheese! I think I would like it. I love to get Huevos Rancheros at Mexican restaurants,and this sounds sorta like it.

I've never seen tamales like this...in a can? In the 'south of the border' section of the grocery store?
